Tomato Egg

   Minimize
Ingredients A    
3   Tomatoes (large, slice into 1-2 inches pieces)
1-2  Sprigs  Green Onion (cut into 1 inch length) 
tsp.  Salt 
1 Tbs. Sugar
  Dash Pepper
     
Ingredients B  
6   Eggs
2 Tbs. Oil
     
     
     

 

  1. Beat eggs in a large bowl. Heat wok, and pour in 2 Tbs. oil and scramble eggs. Remove scrambled eggs from heat when cooked.
  2. Using the same wok, put in green onion and tomatoes. Cook tomatoes till soft, add remaining ingredients in A. If tomatoes appear to be dry, add 1-2 Tbs. water.
  3. Combine scrambled eggs in with the tomatoes. Stir fry for another minute or so. Remove from heat and serve.


Tomato Egg can be served over rice.
