Stir-Fried Asparagus with Scallop

- Marinate Scallop in Ingredients A. Set aside for about 10-20 minutes.
- Wash Asparagus. (Note:The cut ends of asparagus or the light purple portion is tough, therefore, snap off the ends.) Spear cut Asparagus into about 2-inch in length. Set aside.
- Pour oil in wok and in high heat stir fry ginger and scallop for about 3-5 minutes.
- Add in Asparagus. Stir then cover for 3-5 minutes or when asparagus turn slightly transparent green, add salt to desired taste. Stir fry for another minute before remove from heat and serve. (Increase or decreasing cooking time for asparagus depending on desired tenderness.)
