Lettuce Wrap with Scallop

Ingredients A    
¾ lbs. Scallop
     
Ingredients B  
1 lb. Chinese Long Bean
     
Ingredients C  
2   Tbs. Oil
3   Slices Ginger 
¼  Cup    Broth 
1 tsp. Salt

1 Head Lettuce
 
                
  1. Cut bottom half portion of Lettuce. Set aside in a serving plate.
  2. Wash Long Bean and cut into ¼ inch segments. Set aside.
  3. Cut Scallop into ¼ inch cubes. Set aside.
  4. Pour 1 Tbs. oil in wok and stir fry ginger and scallop for about 3-5 minutes. Remove scallops from heat.
  5. Rinse wok and remove all liquid from scallops.
  6. Pour 1 Tbs. oil in wok, and stir fry long beans. Add broth, stir then cover for 3-5 minutes or until tender. Add salt to desired taste.
  7. Add in cooked scallops. Stir fry for another minute before remove from heat and place in serving plate.
  8. When serving, take one sheet of lettuce, scoop 1-2 Tbs. full of cooked long bean and scallop mixture in the lettuce. Wrap it up and enjoy.
