Asparagus Chicken

   Minimize
Ingredients A    
½-¾     lb.   Chicken Breast or Thigh (bonelss and skinless)
2   Tbs.   Oyster Sauce 
Tbs.   Hoisin Sauce 
2   tsp.   Wine 
½  tsp.  
Pepper
     
Ingredients B  
2 Tbs. Oil
1-2  tsp. Garlic (minced)
     
Ingredients C  
3 lbs. Asparagus (cut in 2 –inch spears)
½    tsp.  Salt 
     
     
 
              
  1. Clean and cut asparagus into 2-inch spears. Set aside.
  2. Cut Chicken into similar size as asparagus, and marinate in A ingredients for at least 30 minutes before cooking.
  3. In high heat, stir-fry chicken in Ingredients B. Remove from heat when done. (Please note: watch out for hot oil splashes!)
  4. In the same wok, stir-fry C until semi-translucent green in asparagus, and then pour in cooked chicken. Stir-fry some more so that chicken mix well with the asparagus.
  5. Remove from heat and serve.
 
This dish is delightful when served over rice.
