Potato Salad

   Minimize
Ingredients A    
4   Potatoes (large, peel & cut into ½-inch cubes)
½   lb.  Frozen Peas and Carrots (boiled, drained) 
  Eggs (boiled, cut into ¼-inch cubes) 
½  lb. 
 Ham (sliced, cut into ¼-inch squares)
2     
Apples (medium, peeled & cut into ¼-inch cubes)
     
Ingredients B  
1+ Cup Mayonnaise
2+ tsp. Salt
1+   tsp.  Pepper 
     
     

   

  1. Prepared Ingredients A ready and set aside. (Note: soak peeled apples in 1 tsp. salt and 4 cups of water before cutting, this will prevent browning on apples.)
  2. Boil potatoes until soft, then drain. When potato is cooled, combine all Ingredients A in a large bowl. 
  3. Add Ingredients B to the bowl, gently stir until well mixed. Add additional mayonnaise, salt and pepper as desired.

Optional: Fresh peeled and cut cucumber can be added if desired.
