Baked Butterfly Shrimp

Ingredient A    
3 lbs. Shrimp (large size 16-20 per pound)
Ingredients B  
¼ Cup Mayonnaise
3 Tbs. Sugar
Ingredient C  
¼ Cup

Seasoned Capelin Roe (Red fish eggs)


  1. Cut shrimp shell along the body with scissors on the top portion of the shrimp. Slice the shrimp with a knife along its body, similar to butterfly shrimp.
  2. Line the baking pans with aluminum foil. Lined-up butterfly shrimp on the pan.
  3. Mix well Ingredients B, and spread over the top portion of the shrimp with a butter knife
  4. Sprinkle fish egg on top surface of the shrimp.
  5. Broil in oven for 9-10 minutes. Warning: Do not put baking tray too close to the top heating wires. This may burn the shrimp. Place the shrimp about 5 inches away from oven’s top heating wires.
